Blueberry Vinaigrette Recipe

  • Delicious on tossed greens and spectacular when you add sliced mango, more blueberries and goat cheese.  Add sliced chicken for a complete meal.


  • Salt and pepper to taste
  • 1/2 cup corn oil
  • 2 tbsp red wine vinegar
  • 1/2 cup blueberries, fresh OR frozen
  • 3/4 tsp Ground Mustard
  • 1/4 cup corn syrup, light


  1. Combine blueberries, vinegar, corn syrup and mustard seed in food processor or blender. Blend until smooth.
  2. Gradually add oil while mixing. Season with salt and pepper. Chill until ready to serve.
