RED PEPPER, CRUSHED
Crushed red pepper can best be described as hot, red pepper flakes; it is actually the dried fruit pod and seeds of a capsicum pepper. It is often referred to as the ""pizza pepper"" since a common use is as a tabletop ""shake-on"" for pizza and pasta dishes. The flavor is hot, pungent and biting. Durkee's Crushed Red Pepper has 15-30,000 Scoville heat units (SHU).
 
RED PEPPER, GROUND
A product derived from the grinding of different varieties of red peppers. Use in place of cayenne pepper when less heat is desired. For best release of flavor, add at or near the end of the cooking process. May also use as a spicy garnish.
